The link between "Ratlam" and the famous "Ratlami Sev" is rooted in legend According to the story, while visiting the region, the Mughals suddenly felt the urge to eat Sevaiyan (Wheat Vermicelli). However, wheat, the main ingredient, wasn'tavailable in Ratlam at that time. The Mughals then approached the Bhils (the tribals) of the region and requested them to make Vermicelli from gram flour. Locals claim that Besan Sevaiyan, formerly called "Bhildi Sev," is unique to the city. It has a history of at least 200 years and was commercially manufactured in the 1900s.

The pale yellow crunchy Sev made from gram flour and spices was awarded the Geographical Indication Tag (GI) in 2014-15. What sets "Ratlami Sev apart is the use of cloves, black pepper, and other spices in its making it offers a unique and hot flavor due to this distinctive spice combination When combined with oregano, it boasts a crunchy yet soft texture and a robust taste.
